A Super Salad Matrix!
Celebrating one year of What to Cook Tonight with a best-of roundup and a Super Salad Matrix (as good as it sounds).
We can’t quite believe it’s been a year since we launched What to Cook Tonight.
In this time, we’ve created over 150 delicious recipes, and shared a wealth of knowledge about cooking and eating — to help make you a better, more intuitive, confident, and resourceful cook!
Here are some of your favourite recipes we have shared so far…
Thank you all so much for joining us on this journey. As a way of saying thanks for your support, we wanted to create something new and useful for you.
We feel confident we have you covered on the “what’s for dinner” dilemma — What to Cook Tonight ensures that you never run out of inspiration and can enjoy vibrant seasonal meals that will save you money and time.
But what about lunch? Whether you work from home and need something quick and healthy to whip up, or want to make something ahead of time for you to portion out and take to work, a good hearty salad is excellent fuel for a busy working day. So, we created a ‘Super Salad Matrix’ — a definitive guide to delicious salads (that make great dinners too). All the additions and substitutions, what dressings go best with what flavours, how to add an x-factor, how to prep and store for maximum freshness, you name it.
We talked a bit about our go-to salad formula in What to Cook Tonight #5 with the idea of combining a dressing + base + leafy green + vegetable + protein + herb + x-factor to make the perfect salad bowl. There are so many variations of this formula, so we wanted to create an all-encompassing matrix for you to have some further inspiration.

You can mix and match as many of the bases, vegetables, herbs, etc. as you like. As long as it lives in the same box it can be substituted in or out (if there is an ‘OR’ you can mix any ingredients on each side of the ‘OR’).
